In the Marche, the predominant is the hilly territory that lies from the Apennine mountains towards the sea, on the sides of the thirteen valleys that cross the region. The hill, medium or loose, sheltered from the sea winds, favored by the brightness and heat of the sun, is particularly suitable for the vine. For this reason, the varieties of cultivated vines have given prestige, since long ago, to regional production. The exact origins of viticulture in this region are not historically certain, but in the Piceno fossils of vitis vinifera dating back to the Iron Age have been found, and the fame of the piceni wines among the Romans has often been documented. In recent decades, the physiognomy of the Marche vineyards has changed a lot; the vine supported by the tree or the pergola around the house or in the garden has disappeared from the landscape.
The history of Garofoli is a story of men and a family that has been identified in the world of wine production for five generations now. Always the same philosophy has guided the company: continuous updating of production techniques but respect for traditional and historical wine-maring systems; attention to the evolutions of the market and its needs but loyalty to the value of the peculiarities that the traditions of the territory have transmitted.
The production of Garofoli is carried out in two cellars. Great care is reserved for the selection of grapes and the choice of the ripening moment through chemical and sensory analysis of the vine itself. Verdicchio grapes are processed in the Serra de’ Conti winery, in the classic Verdicchio dei Castelli di Jesi wine production area. The base grapes of the Rosso Conero wine are instead vinified, always within the production area, in the Castelfidardo cellar where the base grapes of the Rosso Piceno wine and other non-Doc white and red grapes are also processed. Winemaking operations are conducted with the most modern oenological techniques. In the latter cellar, the operations of wine aging, aging, sparkling wine and bottling also take place. The administrative and commercial headquarters of the company are also located in the Castelfidardo cellar.
