The LAB of Bellesi Luigi is an artisan and natural laboratory of baked goods who was born in 1988 in Montecosaro and moved to Pian di Pieca. Communication and love, ethics and respect, clarity and awareness, stories and traditions, qualities and flavors of the past, of harmony, joys and passion. These are the principles to which our company, our philosophy, our work and our life refer. Particular attention and respect are due and dedicated to the final consumer.
Sourdough, flour and water, is the basis of all our products
The bread is handmade as it once was, let on boards and covered with cotton cloths, it is baked on a wood oven by hand, taken out of the oven and then cleaned. Pizzas always handmade like bread, always baked on a wood oven.
We make various biscuits, rusks, tarts, arancini, chocolate discs, the salty type sfogliatelle, breadsticks and salads and various others.
Much of our production is also suitable for those who follow a vegan diet.
Much of the work (over 80%) is done by hand.
The wood-burning oven was built with handmade bricks, composed only of earth and clay from our territories, mounted raw following ancient processing procedures.
The wood we use (carpino, ornello and cerro) is cut in mountain areas described by current regulations, the cutting is done so that the tree can grow back and possibly on the southeast side.
